Elm Hurst Inn & Spa Executive Chef since 1996, Michael Davies received classical training at Toronto’s George Brown College. He holds an Interprovincial Red Seal and is a certified Chef de Cuisine with Honours Standing.
Michael apprenticed at Benmiller Inn, Goderich and has worked at the Church Restaurant and Key Stone Alley Café in Stratford, the London Hunt and Country Club, as well as Vancouver’s Convention Centre.
Winner of a London Gold Plate Award for best area restaurant, Michael is a familiar face on television cooking shows, and has been featured in publications such as Where to Eat in Canada and Colio Winery Estate’s Featured Calendar.
Michael is committed to working with local growers and producers to source and serve the finest and freshest local produce, cheeses and meats, including Ontario beef. He is also an experienced culinary teacher for both corporate and leisure groups.
In his spare time, Michael enjoys traveling the globe, sampling the culinary delights at other famous eateries.
